The beauty of this recipe is that it’s healthy, but you’d never know it. It’s filled with sneaky veggies, made with lean meat, and covered in bacon. So, I mean, everyone’s happy. The inspiration comes from the Pioneer Woman’s meatloaf recipe, but making it a meal you could eat on the reg without feeling too guilty, and your kids won’t even know how good it is for them. And your man will be all over that candied bacon, trust me.
Here’s what you need
1.25 pounds lean ground turkey or extra lean ground beef
1 medium or 2 small zucchini, finely grated
2 carrots, finely grated
4 green onions, thinly sliced
1/4 cup flat leaf parsley, finely chopped
1 cup panko breadcrumbs
2 eggs, beaten
1/2 cup grated parmesan cheese
2 tablespoons ketchup
1/2 teaspoon of salt
pepper to taste

8 slices of center cut bacon (any bacon is fine, but center cut is the meatiest)
1 cup ketchup
1 tablespoon mustard
3 tablespoons brown sugar
a few squeezes of sriracha hot sauce (optional)
Combine all of the meatloaf ingredients in a large bowl and work together until everything is well mixed. Form into the shape of a loaf on a broiler pan. Line the bottom of the broiler pan with foil ahead of time, and it will be a cinch to clean up.
Wrap the top of the meatloaf with slices of bacon and tuck them under if needed. Combine the ketchup, mustard, brown sugar and hot sauce and pour over the top, distributing evenly. Bake at 350F for 45-60 minutes, or until a meat thermometer reads 165F.
(Do you have a meat thermometer? Seriously, I love mine because I am not about to wing it with meat. It’s still one of my favorite wedding gifts.)
Pull it out of the oven and let it cool for a few minutes before slicing and serving. We eat ours with roasted potatoes and a big green salad for a nice, balanced meal that even my kids like. And my husband says the leftovers make a killer sandwich. . . Enjoy!

Made this last night & hubby said it was the best ever!! Only thing, I feel like the bacon didn't cook? I mean we ate it & aren't sick from raw meat yet so I'm figuring it cooked enough. But is it supposed to be crispy or does the bacon supposed to still look "raw" light colored & flimsy?
