If there is one thing I love, it’s pasta. In nearly every form. So just because we’re in the throes of alittletoofluffy doesn’t mean I’m giving it up. This meal is a snap to make, light enough to justify even if you’re trying to make healthier eating choices, and absolutely delicious.
You’ll need one box of spaghetti, one pint of cherry tomatoes, one bunch of kale, two shallots, and one four ounce container of crumbled goat cheese.
Boil your pasta to al dente. I like to use either the Smart Taste noodles or the new Hidden Veggie spaghetti – a little extra bang for your buck, and you can’t taste the difference.
In the meantime, thinly slice your shallots and sauté them in two teaspoons of olive oil until just tender.
Rinse and chop your kale and add it to the pan, cover with a lid and let it wilt a bit.
Toss in a pint of cherry tomatoes (I found these yellow sunburst tomatoes on sale and they were perfect) and cook about a minute or two, just until they start to soften.
Toss with pasta, sprinkle with goat cheese.
Serve with a little salt and some fresh cracked pepper and enjoy!
