i could eat this every day. and i do most days. i really look forward to lunchtime and sometimes i want to eat this so bad that i cave in, and eat it at 10:30.
this is about as recipe-ish as i get in summer.

“ingredients”:
mixed greens
pumpkin seeds
almonds
sunflower seeds
dried cranberries
strawberries
blueberries
carrots
green peppers
other things i add in and out:
walnuts
oranges
apples
other berries
cucumber
chicken
sometimes tuna
add a drizzle of this:
i used to use this:
but then i ate it every day for four months straight and i couldn’t eat it anymore.
one day we will meet again, poppyseed dressing. one day.
make this. eat it. love it. taste summer.

I've been eating a lot of salads with strawberries, blueberries, walnuts, pineapple and poppyseed dressing. I hope I don't grow tired of poppyseed. I'm definitely going to try the dried cranberries and pumpkin seeds.

Nothing screams summer like a good fruit salad with greens–YUM. I make my own sweet salad dressing with vinegar, oil, and sugar. If I knew where the recipe card was right now I'd leave it here for you in the comments…. I totally know what you mean about OD-ing on a salad dressing–been there, done that!

i don't know why, but i just CAN'T get on the fruit-on-salad-greens bandwagon. i feel very strongly that there is a place for fruit, and a place for salad, and they don't have the same place.

There is a salad that I eat almost everyday too:) THink red peppers, red onion, cucumber, grilled chicken, feta cheese, tomatoes and for the dressing I use olive oil and vinegar. YUM!! I love the strawberry thing too:)

I LOVE summer salads! Both of those dressings are so good. Have you ever tried white balsamic vinagrette? It's my favorite summer salad dressing. Your salad looks so yummy I want it right now!

I LOVE this kind of salad too! Its a staple at my house! Trader Joes has a really amazing Cranberry Walnut Gorgonzola dresssing that I am addicted too!! I add diced apple and avocado. Im telling you..LOVE!

My favorite go to these days may not sound delish, but ctually I crave it.
Cut up all raw veggies:
1 ear of corn
1 crown of broccoli
1 bell pepper
a handful of baby spinach
(sometimes I add cauliflower too).
Drizzle with balsamic vinegar
and olive oil.
Add 1 chopped up Avo.
Sprinkle on kosher salt and black pepper.
The avo get all mushed in and makes a creamy dressing. The corn is so sweet and everything is all crunchy. YUM!

i actually use candied pecans in mine with strawberries, red onion, spinach and my own raspberry vinagrette dressing.
left over chicken is always good on top too.
this salad always reminds me of summer.
