i don’t know what to call this recipe. my mother in law shared it with us a couple years ago and it has been a go-to ever since. sometimes we call it the taco thing, even though it has nothing to do with tacos. sometimes i call it the salad thing, or in my husband’s case, the nacho thing. whatever thing it is, it is goooood.
ingredients:
2 pounds lean ground turkey
1 can pinto beans
1 can chick peas
1 can black beans
1 jar salsa {however hot you fancy. we use mild cause we force feed it to our kids}
1 can olives, sliced {i can take this or leave it. most the time i leave it}
lettuce to pile it on top of
or chips to pile it on top of. (again, the hubs)
cheese and sour cream to dollop on top.
directions:
cook up the ground turkey. while it’s cooking rinse off the pinto beans, black beans, chick peas. drain the meat, then stick it back on the stop top and add the beans & chick peas.
dump the salsa in. for two pounds of meat i used this entire can of salsaโฆbut, make it to whatever consistency you desire.
heat it all up.
stir it all up.
pile it on top of a bed of lettuce.
i really never say the words “bed of lettuce”, but it sounded good.
top with some cheese.
top with some sour cream.
eat it all up.
