i am so good at coming up with post titles, what can i say?
i have two recipes for you today. two recipes that make me feel like i can do this whole thing for six weeks cause they are so good.
recipe number one has no real name so i am just going to call it the shredded veggie wonder meal. it’s my sister’s recipe and we use it in all sorts of ways. it can be used as a filling in tacos. it can be eaten plain, or with meat, or with tofu. just do your thang.
chop up some onion and garlic and cook on stovetop, in a little bit of oil, until translucent.
shred all your favorite veggies. or chop them really small. my favorites to use for this are zucchini, carrots, cabbage, and broccoli. but, really, you can use anything.
add veggies to onion and garlic and cook til tender.
add in black beans too! i love me some black beans.
season with cumin, chili powder, salt & pepper to taste. and eat any way you please.
badabing badaboom.
and, now, for my weakness…
