this weekend was so delish.
caleb went camping with friends in the adirondacks friday night. i missed my hubby and the boys missed their daddy but he had an awesome time with great friends. it was so beautiful outside, high 70s, sunshine and a slight breeze.we soaked it up as much as we could. saturday morning started out with chocolate chip pancakes, per brody’s request.
and later we went to lakeside farms to get some produce. we got the most delicious corn on the cob that i’ve had in a long time. you should go there now to get some. also got fresh basil, and i love the smell of fresh basil, and the juiciest peaches. i used the peaches and basil to make this salsa:
black bean mango salsa
1 can canned black beans, rinsed
1 large mango, cut into 1/4 inch dice
1/4 cup of thinly sliced scallions, white and light green parts only
3 tablespoons finely chopped fresh basil
1 tablespoon extra virgin olive oil
2 teaspoon fresh lime juice
1/4 teaspoon of kosher salt
1/8 teaspoon of fresh ground pepper
1/8 teaspoon of ground cumin
1/8 teaspoon of pure chili powder
my sweet friend shared the recipe with me and i love it. obviously i switched out the mangoes for peaches and i may or may not have gone crazy with the lime juice.
i’ve been enjoying cozying up on my porch to the wedding (i’m still plugging away at it, i can’t seem to find the time to read these days–could be brody and foster’s fault). speaking of my porch, my wonderful mom is re-covering some patio chair cushions and i cannot wait! i will be showing the big reveal soon.
while playing outside we heard, from 20 miles away, the ice cream truck. my sister wanted to take brody for his first experience with the truck that never stops circling our house. didn’t go quite as planned. after much hemming and hawing, we decieded on the bubble gum ice pop. we were more excited than brody and he wouldn’t even touch the thing for the longest time. erin finally got him to take a couple bites off a spoon which lead to brody’s first brain freeze. kid you not. the child was grabbing his forehead crying “mommy!” he didn’t know what to do 🙁 my poor little guy. needless to say, the ice cream truck experience was not a success. maybe next year.

lovin’ on grammy
my dad, sister, caleb and i tubed the battenkill on sunday. i loved it, the water was chilly but the perfect temperature for a warm afternoon. we drifted slowly most of the time and i laid back to soak up the sun. there were some really low spots that we walked and a few spots where you picked up a little speed. we got out and swam in little swimming holes along the way. it would have been perfect if the water was just a couple inches higher. the staff was absolutely fabulous.

saw a picture of my adorable nephew, jaron, a couple days ago. it reminded me a lot of a picture of brody when he was about 11 months old. so i searched the computer to find it. seriously. these two are identical and making the goofiest face. we may be on opposite coasts but these boys sure know how to channel each other.
