today’s post is from my dearest friend, carina. she was pretty much how we survived on our lake placid trip. she was our cook, hair stylist, counselor, and much more. she lives in washington and here i am in new york but we, really and truly, do life together every single day. i’m so thankful for that. here is a recipe from my girl for you. you will want to make any recipe she shares so this is no exception.

Danielle asked me in early November if I wanted to share a fun Christmas recipe with her readers. Immediately I agreed because two things I love in a major way? Danielle and food. It only took me six weeks to get on the ball because I have this little habit of putting things off. I promise this one is worth the wait, though. And true to my nature, it’s super easy. Don’t let the long list of ingredients fool you – this cake comes together in a snap.
This recipe comes straight from my grandma. You can always mark the beginning of the Christmas season with this showing up at family get togethers. It’s chocolatey, cinnamony goodness that will make your taste buds dance in delight and want to start singing jingle bells. Trust me, it’s that good.
Gather your ingredients:
3 cups all purpose flour
1.5 cups sugar
3 tablespoons unsweetened cocoa
1.5 tablespoons cornstarch
1/2 teaspoon salt
1.5 teaspoons baking soda
1.5 cups golden raisins
1 cup chopped nuts (I like pecans, Grandma uses walnuts)
3/4 cup canola oil
3 cups applesauce
1 teaspoon of each: cinnamon, cloves, allspice
First: combine flour, sugar, cocoa, cornstarch, salt and baking soda.
Give it a quick spin in the mixer. (This is my little trick so I don’t have to sift everything. Lazy.)
Next up, add in the raisins, nuts, oil, applesauce and spices. Using a spoon or spatula, mix everything until thoroughly combined.
Divide batter into two loaf pans that have been sprayed with a little cooking spray.
Bake at 350 for 45-55 minutes, until a toothpick comes out clean. Let them cool ten minutes in the baking dish before turning out to cool completely.
