It looks like the next few days are going to be hot ones, and we fully plan on squeezing the life out of summer, jumping in the freezing cold pool for one last hurrah! But it has been on the cooler side, and I use the term cooler very loosely, up until now. So, you know what that means… I’ve put my baking hat back on. It’s my first time to bake in the new house and I wouldn’t give you anything short of amazing for the breaking in baking recipe.
There’s a perfect muffin for every occasion and these are perfect muffin for holding onto the sweetness of summer while, at the same time, wanting to kiss autumn’s face off. Trust me.
With that, I give you banana streusel muffins. Moist, sweet, and unmistakably August’s muffin.
Muffin Ingredients:
2 cups flour
1 teaspoon baking soda
Pinch of salt
1/2 cup butter, softened
3/4 cups brown sugar
2 eggs, beaten
4 ripe bananas
Streusel Ingredients:
5 tablespoons butter, melted
2/3 cup flour
2/3 cup brown sugar
1/4 teaspoon cinnamon
Pinch of salt
Preheat oven to 350 degrees and lightly grease your muffin tin with butter or cooking spray.
Mix up bananas in electric mixer for 4 minutes, or until light and fluffy. Transfer to another bowl and set aside. Cream together brown sugar and butter with mixer. No need to clean the excess banana before, leave it there for good measure. Add in beaten eggs, one at a time, and then add in the whipped bananas. Combine your dry ingredients in a separate bowl and then gradually add them into the wet ingredients. Pour your batter into muffin tins. Fill ‘er right up. No one likes small muffins.
For your streusel, also known as the best part of this recipe: Melt butter and add in the dry ingredients on top. Mix they dry ingredients into the butter with your (clean) fingers to keep it somewhat crumbly. The original recipe called for powered sugar, not brown, but I didn’t have that on hand and the brown sugar suited me just fine. Drop the crumb topping onto the muffins and bake. Bake for 20 minutes. Makes 12 standard size muffins.
